DERBY PIE

Ingredients

  • 1 unbaked 9" deep-dish pie shell
  • 2 eggs
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract (can also use 1 tablespoon bourbon)
  • 1/2 cup melted butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped, toasted walnuts

Directions

  1. Preheat the oven to 325ºF. In a mixer, beat the eggs on high speed until foamy. Add the flour, salt, sugar, brown sugar, vanilla, and molasses. Beat on low speed until incorporated.
  2. Add the melted butter and beat again until combined. Stir in the chocolate chips and walnuts. Pour the filling into the pie shell.
  3. Bake for 50-60 minutes, until a knife inserted halfway between the edge and the center comes out clean. Cool completely before slicing.
