Recipe of the Week

Makes 6 Servings

Ingredients

2    tablespoons butter
½    small onion
2    slices white bread, torn into small pieces (about 1½ cups)
2    tablespoons chopped fresh parsley
Salt and black pepper, to taste
4    medium tomatoes
1    tablespoon mayonnaise
2    cloves garlic, finely chopped
1    tablespoon chopped fresh basil
1    teaspoon brown sugar
1    teaspoon red wine vinegar
Pinch crushed red pepper
2    tablespoons freshly grated Parmesan

Directions

1. Set the oven at 425 degrees. Have on hand a 10-inch baking dish.

2. In a skillet over medium heat, melt the butter. Add the onion, and cook, stirring often, for 5 minutes, or until the onion softens. Stir in the bread, parsley, salt, and black pepper.

3. Core the tomatoes. Cut each in half horizontally, and gently squeeze the halves to remove the seeds and excess juices. Cut the halves into thick slices.

4. In a bowl, combine mayonnaise, garlic, basil, brown sugar, vinegar, red pepper, salt, and black pepper. Stir well. Add tomatoes and stir gently to coat them.

5. Place the tomatoes in the dish in a single layer. It’s OK for some to overlap. Pour any mayonnaise mixture left in the bowl over the top. Sprinkle with crumbs and top with Parmesan.

6. Bake for 25 minutes, or until the crumbs are golden and crispy.
