Ingredients

12 ounces spaghetti or linguine

¼ cup extra-virgin olive oil

2 pints whole cherry or grape tomatoes

1½ tablespoons tomato paste

Kosher salt and ground black pepper

½ cup chopped roasted pistachios

Grated zest of 1 lemon

Chopped fresh mint

Grated Parmesan or pecorino Romano cheese

Directions

Cook the pasta in heavily salted water until just shy of al dente. Reserve 3 cups cooking water, then drain. While the pasta cooks, in a large skillet over medium, combine the oil and tomatoes. Cover and cook, stirring, until the tomatoes burst, then stir in the tomato paste. Season with salt and pepper. Add just enough reserved cooking water to almost cover the tomatoes, then cover and cook, stirring, until the tomatoes have broken down into a silky sauce. Add the pasta and pistachios and cook until the pasta is al dente and the sauce clings lightly. Off heat, stir in the zest, mint and cheese.
