Recipe of the Week

Ingredients

  1. 3 tablespoons Thai ginger marinade (see below)
  2. 1 tablespoon red curry paste
  3. 2 tablespoons brown sugar
  4. 1 can (13 ounce) coconut milk
  5. ½ cup white wine
  6. 2 tablespoons garlic, chopped
  7. 1-½ pounds mussels

Clean the mussels by removing the beard from the shell and scrubbing the shell under cold water. Whisk together all ingredients, except the mussels, and bring to a boil in a saucepan. Add mussels, cover saucepan and let simmer until mussels open, about five minutes.

Thai Ginger Marinade

  1. ¼ cup Teriyaki sauce
  2. 2 tablespoons sesame oil
  3. 3 tablespoons olive oil
  4. 2 tablespoons ginger, chopped
  5. 2 teaspoons garlic, chopped
  6. 1 teaspoon red pepper flakes
  7. 3 tablespoons cilantro, chopped
  8. Salt and pepper

Mix all ingredients together.
